What’s up with the gluten-free trend?

There are many reasons people go gluten-free. Celiac disease is an autoimmune disorder of the small intestine caused by a reaction to the gluten protein found in wheat. You cannot catch Celiac Disease, you inherit it. A gluten allergy is a food allergy much less serious than Celiac but much more commonly found. Many people with neither of these afflictions may find that eliminating gluten from their diets results in better digestion and less overall bloating. Nursing mothers have found that eliminating gluten might lead to a happier baby until that baby’s system is developed enough to process gluten.
