Freezer-friendly recipes

If you love to cook and you are a new mom the simple act of putting a meal together and getting it in the table is a small miracle. All your old ideas of what cooking is go out the window. You are now in survival mode. Go ahead and do all the things that foodies turn up their noses at: buy pre-chopped vegetables, pre-grated cheese. Home-made pie crusts? Fuggettaboutit. They sell pie crust at the grocery store. You get the idea.

You will, of course, eat your share of take-out and frozen meals. But knowing that the nursing mom is eating for 2 (still!) avoiding all the gunk and who-knows-what that comes in processed foods is a swell idea. And if you need to eliminate any key ingredients from your diet, to-go food will present a few challenges. Where I live the take-out options are limited and I’m forced to forage through the depths of my refrigerator several nights a week. Some of my more “creative” foods have resulted from this process.

If you’re going to bother to cook, you might as well go big. Big as in volume. Make enough for 2 or 3 meals. Cook like the hungry person that you are.

Your freezer is your friend, make it work for you.
